Founded in 1983, Charbay is one of the original artisanal distilleries in the U.S. The enthusiasm and wisdom of Charbay’s founder, Miles Karakaseivc, fuels his son, Marko, the family’s 13th
Generation Master Distiller as he brings his own creativity to the Alambic Charentais Pot Still. Select quality whole fresh fruits for wine making are bought over to Spring Mountain or to the distillery over in Mendocino County. On the mountain the fruit are fermented or de-putted and crushed directly into 1 ton gallon open-top fermenters, and then different products are added to rest in the fermentation for about 6-12 days. For alcoholic distillation, there is a 3 piece equipment: the Still, the Rectifying System, and the Condenser. The Alambic Pot-Still if formed into an onion shape from two plates of red copper.
Marko started brewing beer when he was in high school.
Through his father, he learned that beer was the base of whiskey, minus the
hops. When he got older, he wanted to know what whiskey would taste like if it
were distilled from beer he liked to drink—Charbay Whiskey Release I was born
in 1999, distilled from bottle-ready pilsner beer. Later, Marko wanted to
distill whiskey from his favorite beer, Racer 5 IPA from Bear Republic.
He talked to the Norgrove family (Bear Republic is family owned and operated,
as is Charbay) about the concept and a new friendship was immediately sparked.
Charbay R5 is the brainchild of Marko after four years of extensive research
with the Bear Republic team. Marko Karakasevic on purchasing bottle-ready beer
to distill into whiskey, “I buy the biggest car I can - it comes with a driver
and 18 wheels!”
